Cooking with Rice Flour...

It can be highly frustrating as you learn to bake with gluten-free flours.  Especially when you are using a blend that is heavy on the rice flours.   Due to its density you actually need to use less flour than your other recipe calls for especially if you are used to using Red Bob's All Purpose Gluten-Free Flour.   A reduction by half the usual flour amount is the first change that we have discovers helps a rice flour loaf of bread to rise.  As this is a process of trial and error this is the first concrete "Aha!" Shauna has uncovered.
